White Chocolate Cheesecake

Crust:
1/2 cup butter
1/4 cup sugar
1/2 teaspoon vanilla
1 cup flour

Filling:
4 8-oz. packages cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla
4 eggs
12 oz. white chocolate, melted and slightly cooled

Preheat oven to 325 F.
For crust: cream butter, sugar, and vanilla in a small bowl with an electric mixer until light and fluffy. Gradually add flour, mixing at low speed until blended. Press onto bottom of a 9-inch springform pan. Prick with a fork and bake 25 minutes or until edges are light brown.

For filling: beat cream cheese, sugar, and vanilla at medium speed with an electric mixer until well blended. Add eggs, 1 at a time, mixing at low speed after each addition, just until blended. Blend in melted chocolate, and pour over crust.

Bake 55 to 60 minutes or until center is almost set. Loosen edges of cake from pan and cool before removing the rim. Refrigerate 5 hours or overnight. Garnish with chocolate curls and powdered sugar.

Serves 12.

Hey Dive, pick up a few 4-inch spring form pans and give a bunch away. You're sure to get a wife if you pass out cheesecake.

That sounds great Robyn. I might heat a bit of raspberry puree and swirl it through (like making a marble cake) and throw a few fresh raspberries on top..but hey that is just me. Can't ever leave well enough alone.

Lynn, this one is great because the crust is a nice cookie instead of a crumbly graham cracker thing.

I'm not usually a fan of a baked cheesecake but this one reads deliciously!

Do you get the recipes on the back of Philadelphia cheese over there? One of my faves was the Toblerone Cheesecake. Mmmmmm!

Rich, There used to be a crappy old building down town that a friend and I thought would make a great cheesecake shop. It burned, though, in a big block fire that took out three bars. Now it's been redone, and it's one of the taverns. No cheesecake there.

Ms. Mac: the packages for cream cheese have recipes on them, but I get mine from a book I got from a sister-in-law. Her husband used to work for Kraft, and all the employees got these nice spiral-bound cheesecake books with pictures.

I am reading A Whole New Mind: Why Right-Brainers Will Rule the Future , by Daniel H. Pink. I wouldn't have chosen this book had I been book hunting because I lean toward fiction—it was a gift from someone who, like me, is right-brain dominate. I haven't gotten very far, just far enough to learn that in Hippocrates' day, the left side of the brain was considered the true source of thought, the thing that separated us from the animals and made us human. It was the source of reason and logic. The right side was considered a useless left over, a parasite. Now we know that both sides of our brains are equally important and equally involved in our daily thoughts and functions. Everybody Needs A Little Crème Brûlée

I went out to dinner with some friends the other evening and ordered crème brûlée for dessert. It was lovely—crispy sugar crust and creamy custard underneath. I'm a bit of crème brûlée fan and order it more often than I order any other restaurant dessert, which is not to say I always order dessert—only now and then. On my way home, I remembered I had a crème brûlée kit at home with ramekins, a torch, and a basic recipe. I love the torch. So, now I have made my favorite dessert at home, and I recommend that everyone have crème brûlée. It makes the world better. I used the recipe on the box, which was simple and basic. My only suggestion for improvement is to use less sugar for the caramelized crust. It was so thick, it was like chipping away at glass. An ice pick would have come in handy, or a diamond.
